A Shopify theme has one layout; the snippet goes into layout/theme.liquid before </head>. Go to Shopify Admin -> Online Store -> Themes -> Edit code.

Shopify navigation is tracked automatically as pageviews. The tracker hooks history.pushState so SPA-like navigation in the storefront counts without extra code.
Deploy and open the storefront at the address you gave the dashboard. The realtime view shows the visit within seconds; if nothing appears, check that data-domain matches your myshopify.com or custom domain and that an ad blocker is not blocking the request.
